Day 2

I can't believe its already Hump Day. I mean really it seems like the older you get, the faster the weeks just fly on by. So yesterday was a pretty eventful day. I didn't really do much. I lost track of time being on the internet, mostly being on blogger lol. I rushed out the door to work about 8 minutes later then I normally leave, mostly because I was distracted.. and then I got to work, there wasn't much eventful about work other then it was a very rare day that the number of children in my room dwindled down to about 4 by the time it was 3:40 which is very very rare and made if feel like 5. I work in whats called the Muppet room. Those little one  year old's are so adorable and its so cute to see there personalities. Thanks to the numbers though, I was able to enjoy some time working with the Snoopy's, it is so much fun being able to interact with these kids and being able to communicate with them and truly listen to what they are saying.


The rest of my night was simple. I took care of some errands and bills, and then came home and put supper together before, trying to enjoy some relaxation and gaming... that didn't go far though thanks to the massive headache I got within minutes of dinner... so instead I enjoyed a good book, before watching a movie and bed. That's how the arrival of this morning came. Lots of tossing and turning last night, and dreams of all sorts of weirdness, and finally the okay okay I am awake. Right now I really should be cleaning the dishes lol but I found this new love for blogging and just being able to express myself so really what can compete with that?


Eventually I plan to write down my goals for 2012. The main goal for now is to try and blog everyday, workout with my zumba fitness and gradually increase the time for that, and make delicious meals at home that are not only healthy but from scratch as best as I can. Ive discovered in the year of 2011 my meals consisted of eating out everyday, and that got me absolutely no where, this year I want to eat out less and  come up with my own recipes and food, and just make it more fun for me to experiment and try new things. The only thing really sucking about the whole food and meals and what not is the fact that I can no longer eat fish, but there is so many other good things out there to eat and try.. and I've realized there's a million ways you can cook chicken.. Should be fun.


So while we are on the subject of chicken I thought I would share this little tid bit, so one day I was craving Chicken Cordon Bleu' and at the same time French's Crunchy Onion Chicken... so I thought to myself why not put the two together and come out with an amazing meal. It was worth a shot right? So I did and oh my goodness was it not the most mouth watering, juiciest, tenderest chicken I ever did taste in a while. I guess I should share the recipe to huh? I mean my description probably has your mind being curious right? I call it Crunchy Onion Cordon Bleu.




Crunchy Onion Cordon Bleu






1-4 Chicken Breasts ( basically one chicken breast per person)
1-4 Slices of Ham
1-4 slices of provolone cheese
       Honey Mustard ( I eye balled the amount I put on so there is no real exact amount)
1-1 1/2 things of Frenches Fried onions  (chedder flavor or just original, I used a mix of both)
1 1/2 TBS Flour
1 TBS  Bread Crumbs


Preheat oven to the temperature labeled on the back of the French's Fried Onion container..


Smash the chicken breasts so that they are flat using a meat tenderizer. Squeeze honey mustard onto one side of the chicken and place one slice each of the ham and Provolone cheese. Roll up and old with toothpicks if necessary ( colored toothpicks are best for easy sight to remove once cooked).


In a bag crumnle the French's Fried Chicken mixed with the flour and bread crumbs.


Rub the outside of the chicken with honey mustard enough so that the Coating mix will stick.


Place the chicken into the coating and cover completely.


In a shallow casserole dish line it with oil, vegetable or olive whichever you prefer this should help the bottom of the coated chicken be crisp and not soggy from the chicken juices.


Place in oven according to length of time on back of French's Fried Onion container ( I always double check chicken to make sure its not pink.. once inside of chicken is white remove from oven).


Remove toothpicks and there you have a delicious dinner for however many desired to make it for.


I suppose that's all the chatter I have for this morning. I really wish I had a picture to go with this recipe but I was so anxious to eat it that day, that it slipped my mind.. guess you will just have to try for yourself.
